Herb Feta Pasta Salad

Once again, I am using my Herbal Vinaigrette for one of my favorite salads, the basil, standing out in its glory! I always use a whole wheat pasta, and if I use oil in my vinaigrette, which I usually do, I use olive oil or grapeseed oil.

Herb Feta & Pasta Salad

INGREDIENTS:

  • 2 cups whole wheat corkscrew or shell pasta
  • 1/4 cup herbal vinaigrette/olive or grapeseed oil salad dressing
  • 1/4 tsp freshly cut basil leaves
  • 1/4 tsp freshly cut dill weed
  • 1/4 tsp freshly chopped elephant garlic
  • Dash of freshly cut oregano
  • Dash of pepper (always to taste)
  • 1 small 6 oz. can of black olives
  • 1 cup fresh Feta Cheese, crumbled
  • 4 fresh tomatoes cut in chunks
  • 2 green onions chopped.

NEXT TO DO:

Cook whole wheat pasta, strain, rinse with cold water and aside in a large salad bowl tossing regularly. Chill in refrigerator.

Remove large bowl with whole wheat pasta from refrigerator.

Toss in 1 cup Feta cheese, crumbled, tomato chunks, chopped green onion; mix well.

Add evenly, chopped basil, chopped dill weed, chopped elephant garlic, dash of oregano and pepper to taste – toss until the pasta is evenly covered.

Add the herb olive oil/grapeseed oil vinaigrettes and toss until pasta and veggies are even covered.

Viola – one of the healthiest recipes savored with heavenly herbs, that you will find. Enjoy.

Serves 8.
