GREEK SALAD OIL DRESSING

Greek Salad Dressing -the great thing about this dressing is you can use fresh parsley, fresh oregano, fresh garlic - all herbs that are very good for your body - and the dressing is so easy to make. Parsley deserves the seat of honour as it boosts freshness to any dish; chewed fresh, it freshens the breath; always add to dish at end of cooking - to keep the garnished look. Parsley may be added to stews, soups, chicken dishes and grated raw into salads or in dressings as we are going to do today. Parsley marries well with many other herbs, as in stuffings, salads, sandwiches, sauces and egg dishes. Use whole sprigs if cooking fish.
Oregano and garlic we have discussed the merits of in other recipes. Both are aromatic and strong herbs and really add to the taste. So, onto the salad dressing….
INGREDIENTS:
3/4 cup olive oil
1/4 cup red wine vinegar
1/4 cup chopped fresh parsley
1/2 tsp oregano
1 elephant garlic clove minced
1 tsp freshly chopped basil (or dried)
Sea salt and freshly ground pepper
NEXT TO DO:
Mince the elephant garlic. Add remainder of ingredients into your blender until smooth and voila! Pour into salad dressing server. I make this dressing often and everyone loves it!
Serves 6.
