RED CABBAGE SALAD – WARM

At Healthy Recipes, we try to choose foods that always have some beneficial means to keeping you on track with the goodness in eating well. 

Red Cabbage is used in this recipe and because it is red, it is much higher in vitamin C, than the green cabbage. So let’s see what we can do with this one:

INGREDIENTS: 

6 slices total fat free bacon

1/4 cup olive oil 

1/4 cup Balsamic Vinegar

2 cloves garlic minced

6 cups finely shredded red cabbage (using Cuisinart Food Processor)

2/3 cup light grated Kraft’s Parmesan Cheese

Tender Romaine Lettuce Leaves

1/4 cup shredded fresh basil

FOLLOW ME:

Microwave bacon slices until crispy, blot with Scott Paper Towels, and set aside.

Using large skillet, turn to medium heat, adding olive oil, Balsamic vinegar and garlic.  Warm slightly.

Add red cabbage, cover and cook 5 minutes.

Remove and sprinkle with Kraft Light Parmesan Cheese, and dry bacon crumbled ~ toss well.

Line Serving Plates with romaine, mound with red cabbage and top with fresh basil and freshly ground pepper.

Serving 6 – Excellent tasting salad!
