BAKED APPLES A’ LA FRUIT

The aroma of cinnamon will fill the air as these yummy apples bake in your oven.  Each apple is filled with nutritious dried fruits and wine and apple juice to create the dessert of a lifetime.

Growing up on an apple orchard, this recipe was a constant in our healthy eating; therefore, we felt compelled to offer this Healthy Recipe to your collection.

INGREDIENTS:

1/4 cup port

1/4 cup apple juice concentrate

1/4 cup dried blueberries, cranberries, or sour cherries

2 tsp ground cinnamon

4 baking apples, i.e. Jonathan, Mackintosh or Gala

FOLLOW ME:

Pre-heat oven to 350F.

Bring wine and juice concentrate to a boil in a small saucepan.

Add cranberries and cinnamon; stir and cover – let sit for 15 minutes.

Core apples, being careful not to cut through the bottom. Using a paring knife score around the apple approximately 1/2 inch from bottom. Peel from top down to scored line to stop from splitting while cooking.

Set apples in glass baking dish so they do not touch each other.

Fill center of juice soaked cranberries using remainder of juice to spread over apples.

Pour enough water to 1/3 inch in baking dish. Cover dish with foil.

Bake for approximately 20 minutes. Remove foil and bake a further 20 minutes.

Voila – baked apple dessert is completed – serve warm in fancy dessert dish.

Recipe serves 4.

STRAWBERRY MARGARITA SLUSH

Healthy Recipes has found a cool recipe for a strawberry margarita slush.  I made these numerous times in the summer – a delightfully fresh, tart drink that will wet anyone’s whistle!

INGREDIENTS:

2 cups fresh strawberries (can use frozen if in winter)

2/3 cup fresh lime juice (6 – 8 limes)

1/4 cup Splenda (sugar replacement)

1 tbsp tequila(non-alcoholic use fresh lime juice)

1 tbsp orange liqueur (non-alcoholic use fresh orange juice)

NOW THE FUN STARTS:

Combine all ingredients in a blender, processing until mixture is smooth.

Pour mixture into a 9 x 5 x 3-inch loaf pan; cover and freeze until just firm (approximately 3 -4 hrs).

Remove chilled strawberry margarita from refrigerator, breaking into pieces. into an already chilled bowl.

Beat strawberry mixture with hand mixer until just smooth.

Now the mixture is ready to serve!    Please note that this mixture can stay frozen until you are ready to serve.  You may scrape the mixture off in layers of curled shavings to put in fancy dessert dishes.

This healthy beverage/dessert only contains approximately 50 calories if used with Splenda – what a delightful, classy idea.
