BASIL ARTICHOKE PASTA
This is one of my all time favorites; it is fast, simple and supremely tasty! This healthy recipe has good, flavourful healthy items in it, including freshly cut basil, which transforms the dish from being ordinary, to something remarkably delicious.
INGREDIENTS:
2 tbsp virgin olive oil
3 cloves elephant garlic chopped
1/4 cup freshly chopped basil
1/2 red pepper diced
1 jar (3/4 cup) sun dried tomatoes (or can be dehydrated)
1 cup artichoke hearts sliced
1/3 cup black olives
1 box of whole wheat bow tie pasta
NEXT TO DO:
Cook whole wheat pasta until slightly softened. Drain, rinse with cold water and set aside.
I prefer to saute garlic in olive oil; then add red pepper and freshly cut basil; cook for about 5 minutes.
Then I add my sun dried tomatoes, sliced artichoke hearts and olives, stirring until nicely blended. When the vegetables are heated, presto - time to add the whole wheat pasta and toss like a salad.
