STUFFED BELL PEPPERS

Posted by Carole-Anne on December 2, 2007

Healthy Recipes has found a series of recipes that are known to help arthritics or people with fibromyalgia. Basically, there is a list of various healthier food substitutions that I will write out for you in the Uncategorized Section of this site. So, check your food list and choose wisely to help yourself with your meal creations.

Groats are the whole grain of the oat, with only the outer hard husks removed, then toasted.

Lean ground round steak eliminates the amount of fat ingested.

INGREDIENTS:

4 ounces of round steak
3 egg whites
1/2 cup of onions
1/2 cup of tomato sauce
1/4 cup of whole oat groats (available at most health food stores)
2 green bell peppers
1 tablespoon of extra virgin olive oil

NEXT TO DO:

Cook whole oat groats in a Rice Cooker.

Trim any fat off round steak, and grind in meat grinder

Mix raw hamburger and egg whites in a bowl.

Finely cut the onions and sauté in a separate pan using  olive oil. Season with Mrs. Dash or you can add your own flavor.

Mix tomato sauce into onions. In a separate bowl, microwave bell peppers until soft.

Preheat oven to 325 F degrees. Form two large meat loafs using the raw hamburger and place the whole oat groats in the middle.

Stuff meat in Bell Peppers. Place in pot and pour tomato sauce and onions over. Cover and bake for about 2 hours.

Recipe serves 2 people.  Yummy – delicious!

PS:  I would add a nice tossed salad with a vinaigrette on it and maybe biscuits.  See Salads and Biscuits, Breads & Muffins in Healthy Recipes.
