SIX BEAN SALAD DELIGHT

Healthy Recipes loves this bean salad, as it can be made the day before; therefore the flavor is savored.  Add the onions and peppers and let sit overnight and we have a terrific bean salad, tasty as can be.

INGREDIENTS:

1 cup balsamic vinegar

1 cup extra virgin olive oil

2 tbsp sugar replacement Splenda

Dash of Sea salt

Freshly ground pepper to taste

1-14 oz can green beans

1/14 oz can yellow wax beans

1-14 oz can red kidney beans

1-14 oz can garbanzo beans

1-14 oz can black beans

1 green pepper insides cleaned out and pepper sliced in rings

1 red pepper insides cleaned out and pepper sliced in rings

1 Spanish onion sliced into rings

Sprig of fresh cilantro leaves

NEXT TO DO:

Drain the beans and pour into large salad bowl (with cover).

Mix balsamic vinegar and extra virgin olive oil; add salt, pepper and sugar replacement (Splenda). 

Pour liquid mixture over entire bowl of beans, and slices of red and green pepper, and onions.  Toss gently; cover and let sit overnight in refrigerator.

Prior to serving, garnish with fresh cilantro on top.  Serve in attractive serving bowl. 

Healthy Recipe will serve a party of 10 to 12 people
