SPICY CHICKEN STEAMED IN BANANA LEAVES
Healthy Recipes endorses this recipe from a friend who lived in Indonesia for many years. The spicy chicken has such an exotic flavor which I am certain most of you will really enjoy.
INGREDIENTS:
1 chicken cut into 4 pieces
2 cups lemon basil leaves
2 green onions chopped
1 piece lemon grass
1 bay leaf
1 inch galanga root crushed
2 tbsp extra virgin olive oil
12 small whole green peppers
Seasoning:
2 tsp coriander
5 cloves of shallots
3 cloves of garlic
1 tbsp turmeric
1 inch fresh shaved ginger root
2 small tomatoes
2 tsp brown sugar
1 tsp sea salt
2 tbsp tamarind juice (see specialty section is grocery store)
NEXT TO DO:
Grind and mix the seasoning well. Saute seasoning until fragrance permeates the room.
Add galanga root, bay leaf, green onions, lemon basil leaves, tamarind juice and brown sugar.
Stir in whole green chili peppers. Stir fry until there is a spicy aroma. Mix well.
Cook until chicken is half done. Remove from heat.
Divide the mixture into 4 parts. Wrap each part in banana leaves (layered double).
Arrange wrapped chicken in steamer and steam for 2 hours. The aroma is just amazing.
Serve with Basmati Rice.
