TABBOULEH DELIGHT

Healthy Recipes finds that there are so many uses for grains, lentils and wheat and their products, to make the best recipes by adding vegetables, pastas, greens.  There is a whole new world out there without meat.

INGREDIENTS:

3/4 cup bulgur

10 oz fresh parsley

1/2 cup fresh mint leaves

4 spring onions

4 tomatoes chopped finely

2 cloves garlic minced

1/3 cup lemon juice

3 tbsp extra virgin olive oil

NOW FOLLOW  ME:

Place bulgur in a bowl with 6 oz water and let sit for 15 minutes or until water is absorbed.

Finely chop herbs with a sharp knife.  You may use food processor but take care not to over-process.

Place bulgur, herbs, spring onion, chopped tomatoes, garlic, lemon juice and extra virgin olive oil in a bowl and toss well.

Chill until ready to serve.  Remove to have at room temperature when serving.

Healthy Recipe makes enough salad for 8 servings.

ARTICHOKE RICE SALAD

Healthy Recipes really enjoys times when we can offer you a simple recipe that can fulfill you as a meal.  I make my vinaigrettes: several of my favorites, I make ahead of time to do me for a week or two.  Then I just whip up the salad and ..voila!  I have the vinaigrette for the salad in my hands.

SALAD INGREDIENTS:

1 cup uncooked regular long grain rice (brown is better for you)

Lemon Garlic Vinaigrette as below.

1/4 cup chopped green onions

1/4 cup fresh chopped parsley

1 small red pepper, chopped

1 can (14 oz) artichoke hearts, drained and cut into quarters.

NOW FOLLOW ME:

Cook rice as directed on package.

Mix rice and green onions, freshly cut parsley, one small red pepper chopped and artichoke hearts quartered. 

Toss with Lemon Garlic Vinaigrette as below.

Cover and chill for at least 3 hours and serve.

I am so in favor of home-made vinaigrettes, and this one just touches me.  The taste is wondrous.

Lemon Garlic Vinaigrette:

INGREDIENTS:

1/4 cup extra-virgin olive oil

1 tbsp grated lemon peel

3 tbsp lemon juice

1/2 tsp sea salt

1/4 tsp freshly ground pepper

1 clove garlic, minced

FOLLOW ME:

Mix all ingredients in a blender 1 cup container.

Healthy dressing is ready to serveRecipe makes 1/2 cup, dressing for 4 servings.

LEMON LIME TEA

Healthy Recipes found this yummy recipe on a Save-On Foods flyer.  It is so good we just had to offer it to you.

Homemade iced teas like this one offer hydrating refreshment without the added sugar and artificial ingredients that can be found in some iced teas. 

INGREDIENTS: 

1/4 cup freshly squeezed lemon juice

1/4 cup freshly squeezed lime juice

1 cup strong cold tea

1/4 cup Western Family liquid honey

Ice cubes

Western Family Club Soda

4 lime wedges

NOW FOLLOW ME: 

Combine both juices, tea and honey.  Mix well and refrigerate tea and honeyMix well and refrigerate until cold.

Fill 4 tall, frosted glasses with ice cubes, divide the tea mixture into 4 glasses. 

Top up each glass with club soda (about 50 -50) with the tea mixture.

Place a lime wedge on the rim of each glass and serve at once.

Healthy Recipe makes 4 tall cool glasses of Lemon Lime Tea.

CHILI CON CARNE (MY FAVORITE)

Over the years, I cultivated my favorite chili con carne recipe, and it remains my favorite.  I shall share it with Healthy Recipes

My secret is the use of very lean beef, minced, 2 tbsp brown sugar, basil and oregano, and I prefer to use crushed tomatoes (one large can) and 2 tbsp. of tomato paste rather than 2 cans of tomato paste which I see in so many recipes.  Also, I like to let my chili simmer until it thickens on its own. So enjoy this recipe.

INGREDIENTS: 

1 tbsp extra-virgin olive oil

1 lb extra-lean beef, minced 

3 cloves garlic, minced

1 medium-size Spanish onion, chopped

1 green pepper, chopped

1 cup canned mushrooms without juice (or fresh sliced)

2 tbsp chili pepper

1 pinch of cayenne pepper

1 14-ounce can crushed tomatoes

2 tbsp tomato paste

2 tbsp brown sugar

2-14 oz cans red kidney beans (rinsed)

NOW FOLLOW ME:

Heat olive oil in large heavy-based pan.

Add the garlic, onions, and green pepper; cook over medium heat until golden browned.

Add very lean minced beef, cooking on medium-high heat, well browned.  Add chili powder, cayenne and oregano and basilStir well and cook over medium heat for 5 minutes.

Mix crushed tomatoes, tomato paste, 1/2 cup water and let simmer for 30 minutes, stirring occasionally.

Add, beans, sugar, and flavor with seas salt and pepper to taste.  I let the chili simmer on lowest setting for a couple of hours and the flavour is out of this world.

Now, just before serving, I like to grate some light cheddar cheese on top and let it melt a bit into the chili

This Healthy Chili Con Carne Recipe is now ready to serve.
