TRADITIONAL AMBROSIA SALAD

This dessert salad has been a part of our traditional family recipes for Christmas for as long as I can remember.  I have tried to reduce the calories so it is edible.  It certainly is a big favorite among everyone I have served it too.

INGREDIENTS:

1 cup light sour cream

1 cup miniature marshmallows

1 cup pineapple tidbits, drained

1 tin mandarin oranges separated and drained

1/4 cup maraschino cherries, halved

1 cup  long coconut strings

FOLLOW ME NOW:

This is easiest, fastest recipe I know of.  Place all ingredients into a medium fancy glass bowl and gently toss until mixture is covered with sour cream. 

Let sit several hours before serving.

Healthy Recipe will keep for up to 2 days.

Healthy Recipe serves 6 – 8 people.

EASY ORZO SALAD WITH PEAS

One of Healthy Recipes favorite salads is with orso risotto and green peas, mint and feta cheese with tomatoes.  It is so refreshing , and well as extremely healthy.

INGREDIENTS

2 cups uncooked orzo rice with dried tomatoes

3 cups chicken broth

1 cup small tomatoes quartered

1 cup English cucumber, peeled and diced

 1/2 cup crumbled feta cheese

1/2 cup diced yellow bell pepper

1/2 cup green onions

1/2 cup frozen green peas, thawed

1/4 chopped black olives

2-2 tbsp minced fresh mint leaves

1/4 tsp freshly ground black pepper.

Dressing:

1/3 cup Italian dressing fat free

1 tbsp Balsamic vinegar

Freshly squeezed lemon juice

2 tsp honey

1 tsp Dijon mustard

NOW FOLLOW ME:

Cook orzo risotto in a skillet with 2 tbsp extra virgin olive oil and once sauteed for 5 minutes, slowly add chicken stock and let simmer until orzo has thickened (about 10 – 15 minutes).

Drain orzo, let chill.  Add all the salad ingredients in a large bowlAdd dressing and toss to coat saladCover with plastic and you can refrigerate overnight for that “extra” flavor.

Healthy Recipe makes 6 servings.  Yummy!

CINNAMON SPICED ORANGE TEA PARTY

Healthy Recipes has had this recipe for 25 years, and chooses it for use at a tea party, or after dinner tea if there are more than 6 – 8 people.  Very tasty tea it is indeed.

INGREDIENTS:

2 cups lightly packed Splenda sugar replacement

2 – 3 cinnamon sticks

1 tsp whole cloves

1 1/2 cups real orange juice

1 1/2 cups real lemonade

8 regular tea bags (I prefer Salada or Celestial)

NEXT TO DO:

Combine Splenda sugar, cinnamon sticks, cloves with 5 cups of water.  Bring this mixture to a boil.

Add orange juice and lemonade. Simmer.

Combine tea bags and 4 cups boiling water to make a strong tea.  Add this mixture to above mixture of juices and water.

To serve Healthy Recipe of tea, add 1/2 cup of tea mixture and one half of hot boiling water.  Voila – excellent tea to surprise your guests!

Healthy Recipe to serve 15 – 20 people.  This is the best recipe.  Cut it down if you wish to make smaller amounts.  Ciao for now.

POTATO PEPPER PAN (MY FAVORITE)

This is an excellent, easy side dish to serve with chicken, porkfish, or any egg dishes

I use 1 tbsp butter (bad bad girl) but to be healthier, one could use 1 tbsp extra virgin olive oil?  I think I will start doing that as well.  Believe me, it will taste just as special with the olive oil.

INGREDIENTS:

1 tbsp extra virgin olive oil

3 cups diced potatoes (I use red/white fresh potatoes and leave the skins on) just wash them well.

1 cup green and 1 cup red pepper diced

1/4 cup skim milk

3/4 tsp Sea salt

Freshly ground pepper

1 tbsp freshly grated Parmesan cheese

FOLLOW ME:

Saute potatoes in extra virgin olive oil

Add green and red peppers;  saute just until just cooked. (5 minutes).

Stir in milk, sea salt, then sprinkle well with freshly ground pepper.

Place in glass baking dish 9″x 13” and sprinkle with freshly grated Parmesan cheese.

Bake at 400 F degrees for 15 minutes at the most.

Healthy Recipe serves 4 – 6 people.  Yummy!
