BLACK BEAN CHILI

Healthy Recipes now has tried a wonderful black bean chili.  It does have ground beef in it, but for vegetarians, remove the beef and add another variety of beans or orzo grain pasta to replace the beef.  I have tried it both ways and like the orzo  grain recipe just as much if not more than the beef recipe

INGREDIENTS:

1 tbsp extra virgin olive oil

1 small onion chopped

8 oz very lean ground beef (for Vegetarian, use kidney beans, 1 - 14 0z can and/or make Orzo (grain pasta) and add it to recipe with beans.

2 tsp chili powder

1 cans 14 1/2 oz diced tomatoes with green chilies in them

1 cup water.

NOW FOLLOW ME:

In a large skillet (do not use Teflon), add 1 tbsp extra-virgin olive oil and chopped onion.  Simmer until beef is browned and onions are transparent.(15 minutes).

Stir in chili powder and cook for 2 minutes.

Stir in 2 cans black beans (or kidney beans and/or prepared  Orzo),  1 can tomatoes with green chilies, and 1 cup water

Heat to a boil, then reduce heat to simmer for 25 minutes.  This allows the mixture to thicken on it’s own. 

Stir occasionally.

Awesome healthy recipe makes 5 cups (vegetarian dish may contain more).  I find it so satisfying when a recipe can be used either way, because many people have stopped eating red meat.  So go for it.  You will love the taste of this healthy recipe.

BLACK BEAN SOUP

As  you can see, Healthy Recipes is making the most out of our black bean recipes because they are so good, and very healthy for us.

INGREDIENTS:

1 cup fresh salsa

Pinch of allspice

2 cans 15 - 19 oz of black beans

3 cups low-sodium chicken broth

FOLLOW ME: 

In a large soup pan, cook  1 cup of fresh salsa and a pinch of allspice over medium heat for 3 minutes. 

Once black beans have been drained and rinsed, pour into pan, along with 3 cups low-sodium chicken broth

Heat to boiling point over high heatReduce heat and simmer for 10 minutes.

Use immersion blender or the handy potato masher to coarsely mash beans.

Healthy Recipe serves 6 people.  This is the best taste.

BLACK BEAN SAUTE

Healthy Recipes has also found a great recipe for a saute made out of black beans.  Again, I have to mention that black beans are a complete protein and carbohydrate so is nature’s perfect food.  Also, must mention to always drain and wash your beans well, prior to using.

INGREDIENTS:

1 small onion chopped

1 tsp extra virgin olive oil

1 clove garlic, minced

1 can black beans  15 to 19 oz

1  - 2 tbsp chopped jalapeno pickle

NEXT TO DO:

In a medium skillet, add 1 tsp extra virgin olive oil, and the chopped onion to brown nicely. 

Then add minced garlic and cook 1 minute.

Stir in 1 can beans and heat thoroughly.

Remove from heat and stir in 1 or 2 tbsp chopped jalapeno pickles.

Healthy Recipe makes 1 3/4 cups, and is a terrific side dish for pork chops. Yummy!

BLACK BEAN SALAD

Black beans have become so popular and Healthy Recipes  shall fill you in on the reasons.  Black beans, as with most beans, are essentially a complete food with nutritious amounts of protein and carbohydrates, and are very healthy for you as well.  They can be mixed with so many other veggies, used as a side dish, such as a salad, which we will do now.

INGREDIENTS:

1 can 15-19 oz can black beans, drained and rinsed carefully

1 can 15 1/4 oz of corn niblets drained

1/3 cup chopped fresh cilantro leaves

2 tbsp Ranch Dressing (low fat)

FOLLOW ME:

In a medium bowl, combine all ingredients and toss salad until Ranch Dressing is mixed completely with the rest of the ingredients.

Now, if that is not easy, what is?

This healthy recipe makes 3 1/2 cups and makes a great side salad for chicken or fish.
