CHOCOLATE PEACAN OATIES

Healthy Recipes must offer some good healthy cookies for the little ones and when the kids come home from school.   They must contain healthy ingredients for healthy living, yet be tasty enough for the children to want to eat the oaties.   These cookies are wonderful – they were one of my favorites when my kids were growing up. 

INGREDIENTS:

1 cup Nutri-Flour

1/2 tsp each baking soda and salt

1/4 tsp ground cinnamon

1 tsp finely grated orange peel (orange peel is the ultimate in these cookies)

3/4 cup unsalted butter (room temperature)

1/2 cup brown sugar

1/4 cup milk

1 egg beaten

2 cups quick cooking oatmeal

1/2 cup semi-sweet chocolate chips

1/2 cup unsweetened shredded coconut and coarsely cut pecans

JUST FOLLOW ME:

Pre-heat oven to 325F .  Spray cookie sheet with non stick healthy cooking spray.

In a bowl, stir in flour, baking soda, pinch of  salt and orange peel.  Stir gently with a fork. 

Using spoon, stir in Nutri-mix  Robin Hood flour into large bowl above.  Add chocolate chips, coconut and nuts.  Mix until just combined. 

Roll dough into 1 1/2 inch balls.

Place on baking sheets 4 inches apart, flattening into rounds.

Bake in centre of 325F oven until edges are golden,  but centers are soft, 12 – 15 minutes.  Watch carefully. 

Cook on rack when cooked.  Store at room temp in air tight container. 

Cookies will make 26 per batch – can be frozen in container with tight fitting lid.   This is such a favorite to make ahead for when the grans come over for a visit.

Use for energy snacks, or lunches or for coffee snack.

Each cookies contains approximately 164 calories only 2 gms. fat.

RAISIN BRAN MUFFINS

RAISIN BRAN MUFFINS

Raisin bran muffins are one of my favorite healthy recipes, as they are nutritious, tasty and can be used for a snack, lunches, breakfast, or part of a brunch. These Raisin Bran muffins only take 40 minutes from prep time to serving.

INGREDIENTS:

1/3 cup nonfat, non sugar yogurt

1 large egg

2 Tbsp grapeseed oil

1/2 cup seedless raisins

1-1/2 tsp baking powder

1/4 cup molasses

2 Tbsp brown sugar

1 cup wheat bran

1-1/4 cups Nutri Flour (1/2 whole wheat and 1/2 all-purpose flour)

 NOW FOLLOW THE COOK PLEASE:

Preheat oven to 400 degrees F (200 degrees C). Line 12 muffin tins with muffin baking cups and set aside. Combine flour, bran and baking powder and mix together.  In another bowl, beat egg, molasses, brown sugar and oil until smooth.

Add yogurt and beat again until smooth and well blended.

Add flour and raisins until all ingredients are just mixed. 

Spoon batter into muffin baking cups until 2/3 full.

Bake in preheated oven for 15-20 minutes, until the muffins are lightly browned and toothpick inserted in center comes out clean.

Cool in muffin tin for 5-10 minutes and this Healthy Living Recipe is ready to serve.  Enjoy!

Yield: 12 servings of Healthy Living Muffins.

RASPBERRY MANGO SOYA SHAKE

This healthy recipe is filled with full rich flavor of mangoes and raspberries; a full size drink will contain 90% of daily vitamin C required, plus 75% beta carotene

Raspberries and mangoes contain multiple anti-oxidants.  Blending these fruits with soft tofu will fill you full of multiple powerful immune boosters.  A soy based beverage instead of cow’s milk, will lower your cholesterol and help you build your immune system.

You have the choice of making a milkshake or soft tofu smoothieTofu when blended will provide you with a smoothie, and please note, tofu will take on the taste of any flavor you combine it with.

INGREDIENTS:

1 mango diced

1 cup raspberries washed

1 soft tofu package (8 ounces)

FOLLOW ME:

Place tofu in blender with raspberries and diced mangoes.

Pulse blend until fruits are softened and then blend on medium high for only 1 minute.

Pour into three 8 ounce glasses.

Healthy Recipe serves 3 glasses of smoothie.

ORANGE BLENDER MUFFINS

Healthy Recipes was fortunate enough to come across this home made recipe, many years ago.  It is easy to make, tastes marvelous and is a basic recipe.

INGREDIENTS:

2 whole oranges

1 cup pure, orange juice, with heart health check on it

2 eggs

1 cup raisins (Sun-Maid are best)

1 cup melted butter (or use extra virgin olive oil much better for you)

1 cup bran into hot melted butter

3 cups Nutri-flour

2 tsp baking soda

2 tsp baking powder

1 cup icing sugar, not packed

1 tsp sea salt

FOLLOW ME:

Place cut oranges and juice in blender.  

Add eggs, butter and bran mixture and raisins together and mix.

Add liquid mix to dry ingredients and mix only until flour has been absorbed by liquid.

Bake 20 – 25 minutes at 400 F degrees.

Enjoy these yummy muffinsbran is great for system as well.  You can replace butter with warmed olive oil, which is better for you, or just have one muffin instead of two!

Yummy orange muffins may be served for breakfast, brunch or for coffee and tea as  a side dish.

Healthy Recipe yields 12 large or 24 small muffins.
