Healthy Recipes loves this easy East Indian dish as it requires little effort and is always a hit with dinner guests. Chicken is to be marinated overnight to make the next day.
INGREDIENTS:
1/2 low fat plain yogurt
1 medium sized Spanish onion chopped
1/4 tbsp minced fresh ginger
2 cloves elephant garlic minced
1 tbsp lime juice (fresh squeezed)
1 1/2 tsp ground coriander
1/2 tsp cumin
1/4 tsp cardamom
1/4 tsp turmeric
1/4 tsp cayenne pepper
1 chicken 3 lbs quartered and skinned
Lime slices
NOW FOLLOW ME:
Combine yogurt, onion, ginger, garlic, lime juice, coriander, cumin, cardamom, turmeric and cayenne pepper in small container for electric blender and whip for 30 seconds.
Place chicken in 9″ x 13″ baking pan lightly greased.
Add the yogurt mixture brushing it all over the chicken pieces and let it marinate in the refrigerator for overnight. Turn the chicken pieces occasionally.
Next day, preheat broiler and rack with olive oil. Place chicken on rack and broil for about 8 minutes to brown nicely.
Reduce heat to 325F degrees. Move chicken back into 9″ x 13″ pan, cover with aluminum foil and bake in oven for at least 30 minutes or until chicken juices run clear and pierced with a fork.
Remove from oven and place on warm platter and garnish with limes.
Cook Curried Brown Rice to serve with this dish.

Almost everyone loves a healthy recipe for a super fast stir fry. As well as containing all your vegetable and protein needs, it will be served over a bed of Jasmine Rice, which completes the all the foods required for an incredible healthy meal. Check this recipe out.
INGREDIENTS:
1 lb boneless, skinless chicken breasts cut into 1/2 inch cubes
2 tbsp Kikkoman Soy Sauce
3 cloves garlic minced
1 – 1″ piece of ginger, finely minced
1 tbsp extra-virgin olive oil
1 tbsp cornstarch
1 medium sized Spanish onion, but into 1/2 inch pieces
1 green bell pepper cut into 1/2 inch pieces
1 red pepper cut into 1/2 inch pieces
1 small 8-ounce can of pineapple pieces
2 tbsp brown sugar
Jasmine Rice (4 servings)
NOW FOLLOW ME:
Place the chicken in small bowl with the 2 tbsp Soy Sauce, garlic, ginger, and chili pepper to marinate.
Prepare the vegetables and set aside.
Heat large wok or large skillet over medium high heat.
Add onion and stir fry for 3 minutes.
Add chicken and stir fry for 5 minutes. While chicken is stir frying, prepare Jasmine Rice for 4 people.
Add all the remaining vegetables.
Prepare sauce with pineapple juice, 2 tbsp soy sauce and the 2 tbsp brown sugar, adding cornstarch as a thickening agent.
Add the sauce and stir fry for an additional 5 minutes or until the chicken is completely done.
Fluff the Jasmine rice and serve as a bed for the incredible Chicken Sweet and Sour Stir fry.
