CHOCOLATE PEACAN OATIES
Healthy Recipes must offer some good healthy cookies for the little ones and when the kids come home from school. They must contain healthy ingredients for healthy living, yet be tasty enough for the children to want to eat the oaties. These cookies are wonderful – they were one of my favorites when my kids were growing up.
INGREDIENTS:
1 cup Nutri-Flour
1/2 tsp each baking soda and salt
1/4 tsp ground cinnamon
1 tsp finely grated orange peel (orange peel is the ultimate in these cookies)
3/4 cup unsalted butter (room temperature)
1/2 cup brown sugar
1/4 cup milk
1 egg beaten
2 cups quick cooking oatmeal
1/2 cup semi-sweet chocolate chips
1/2 cup unsweetened shredded coconut and coarsely cut pecans
JUST FOLLOW ME:
Pre-heat oven to 325F . Spray cookie sheet with non stick healthy cooking spray.
In a bowl, stir in flour, baking soda, pinch of salt and orange peel. Stir gently with a fork.
Using spoon, stir in Nutri-mix Robin Hood flour into large bowl above. Add chocolate chips, coconut and nuts. Mix until just combined.
Roll dough into 1 1/2 inch balls.
Place on baking sheets 4 inches apart, flattening into rounds.
Bake in centre of 325F oven until edges are golden, but centers are soft, 12 – 15 minutes. Watch carefully.
Cook on rack when cooked. Store at room temp in air tight container.
Cookies will make 26 per batch – can be frozen in container with tight fitting lid. This is such a favorite to make ahead for when the grans come over for a visit.
Use for energy snacks, or lunches or for coffee snack.
Each cookies contains approximately 164 calories only 2 gms. fat.

At Healthy Recipes, we realize people do like to have the occasional dessert, or scone, so we feel that we must offer these recipes, but modify or use the healthier products in these recipes. I have used this recipe for years, tried tested and true.
Today, we are going to make Pumpkin Ginger Scones using a Nutri-flour. You can also make this recipe with whole wheat flour.
INGREDIENTS:
2 cups Nutri-flour
1/4 cup sugar (or sugar replacement Splenda)
3 tbsp baking powder
1/2 tsp salt
1 tsp ground ginger
1/4 tsp nutmeg
1 tsp cinnamon
1/3 cup butter
1/3 cup raisins
1/3 cup chopped candied ginger (Hint: rinse off all the sugar on the ginger for less calories)
1 egg
1/2 cup puree pumpkin
1/3 cup 1% milk
NEXT TO DO:
Preheat oven to 425F degrees.
Combine dry ingredients in a large bowl.
Cut butter into Nutri- flour until the mixture forms crumbs.
Stir in ginger and raisins.
Beat eggs, pumpkin and milk.
Add liquid to dry ingredients stirring with fork to make a soft sticky dough.
Turn out onto lightly floured surface and knead gently a few times until smooth.
Roll dough to 3/4″ thickness. Cut into 2 1/2 inch rounds.
Place on baking sheet and into oven.
Bake at 425F oven 10 – 15 minutes or until golden brown.
This is one of my favorite recipes for a brunch or teas, and even makes a good lunch box item.
Healthy Recipe yields 12 scones.

Oatmeal and Wheat Germ you say? Yes! This is an incredibly tasty Healthy Recipe my Auntie passed on to me years ago, and I still make today. I have made a few slight changes to accomodate the healthiness of the recipe.


INGREDIENTS:
3/4 cup light virgin olive oil
1 1/4 cups dark molasses
2 eggs
2 tsp pure organic vanilla (always use pure vanilla for better taste)
1/2 cup Sun Maid dark raisins
1/2 cup sliced almonds
1 1/2 cup wheat germ
2 cups rolled oats
3/4 cup whole wheat flour (can substitute soya flour)
1 tsp sea salt
1/2 cup powdered milk
NEXT TO DO:
Preheat oven to 350F.
In a large bowl, add all but the last three ingredients together.
Sift in 3/4 cup whole wheat flour.
Add pinch sea salt and 1/2 cup powdered milk.
Stir all ingredients together until mixture is smooth.
Cover baking sheet with aluminum foil.
Push mixture from a tablespoon onto the baking sheet.
Bake at 350F for 10 – 12 minutes. Cookies will spread out on baking.
Remove from oven and let cool before using fry pan flipper to take off of aluminum foil.
When using this Healthy Recipe, you may add more nuts or raisins if you prefer.
These cookies freeze beautifully.
Recipe yields approximately 3 dozen. Enjoy!
