RAISIN BRAN MUFFINS
Raisin bran muffins are one of my favorite healthy recipes, as they are nutritious, tasty and can be used for a snack, lunches, breakfast, or part of a brunch. These Raisin Bran muffins only take 40 minutes from prep time to serving.
INGREDIENTS:
1/3 cup nonfat, non sugar yogurt
1 large egg
2 Tbsp grapeseed oil
1/2 cup seedless raisins
1-1/2 tsp baking powder
1/4 cup molasses
2 Tbsp brown sugar
1 cup wheat bran
1-1/4 cups Nutri Flour (1/2 whole wheat and 1/2 all-purpose flour)
NOW FOLLOW THE COOK PLEASE:
Preheat oven to 400 degrees F (200 degrees C). Line 12 muffin tins with muffin baking cups and set aside. Combine flour, bran and baking powder and mix together. In another bowl, beat egg, molasses, brown sugar and oil until smooth.
Add yogurt and beat again until smooth and well blended.
Add flour and raisins until all ingredients are just mixed.
Spoon batter into muffin baking cups until 2/3 full.
Bake in preheated oven for 15-20 minutes, until the muffins are lightly browned and toothpick inserted in center comes out clean.
Cool in muffin tin for 5-10 minutes and this Healthy Living Recipe is ready to serve. Enjoy!
Yield: 12 servings of Healthy Living Muffins.

Healthy Recipes has found this incredible edible, veggie muffins. With these healthy muffins, there is only 60 calories per serving. What a concept! Now you can “have your cake and eat it too.”
MUFFIN INGREDIENTS:
1 1/2 cups Nutri-flour or whole wheat flour
1/4 cup rolled oats
2 tbsp sugar
2 tsp baking powder
1/2 tsp chili powder
1/2 tsp veggie flavored salt
1/2 cup grated sharp cheddar cheese
1/4 cup diced celery
1/4 cup diced red pepper
1/4 cup green pepper
1/4 cup shredded carrot
1/2 cup chopped chives
1 egg well-beaten egg
3/4 cup milk
1/2 cup light sour cream or low fat yogurt
1/3 cup extra-virgin olive oil
NOW FOLLOW ME:
In a large bowl, mix together nutri-flour, oats, sugar, seasonings, cheese and veggies until well mixed.
In another bowl, stir egg, milk, yogurt and oil, and whip together until well mixed.
Line muffin tins with paper and spoon in mixture. This healthy recipe will make 6 large veggie muffins.
Bake in pre-heated oven 375 degrees Farenheit for 20 minutes.
If you prefer to make mini-muffins, bake in 400 degree oven for 12 – 15 minutes.
This healthy recipe will spice up your healthy living program for sure.

Healthy Recipes was fortunate enough to come across this home made recipe, many years ago. It is easy to make, tastes marvelous and is a basic recipe.
INGREDIENTS:
2 whole oranges
1 cup pure, orange juice, with heart health check on it
2 eggs
1 cup raisins (Sun-Maid are best)
1 cup melted butter (or use extra virgin olive oil much better for you)
1 cup bran into hot melted butter
3 cups Nutri-flour
2 tsp baking soda
2 tsp baking powder
1 cup icing sugar, not packed
1 tsp sea salt
FOLLOW ME:
Place cut oranges and juice in blender.
Add eggs, butter and bran mixture and raisins together and mix.
Add liquid mix to dry ingredients and mix only until flour has been absorbed by liquid.
Bake 20 – 25 minutes at 400 F degrees.
Enjoy these yummy muffins – bran is great for system as well. You can replace butter with warmed olive oil, which is better for you, or just have one muffin instead of two!
Yummy orange muffins may be served for breakfast, brunch or for coffee and tea as a side dish.
Healthy Recipe yields 12 large or 24 small muffins.

These are the kind of muffins I like –
home made!
Apples have numerous good qualities about them – so the saying goes
“An apple a day keeps the Doctor away”.
Apples contain
fiber, which
lowers the cholesterol, contain a good source of
flavonoids, and are low in calories.
Oats help keep our
heart healthy, provide
fiber and nutritionally, contain
good carbohydrates.
Oats have many uses, particularly in
cereals, but also can be used as a
filler in making
meat casseroles,
burgers and
meatloaves.Today we are making an old fashioned
Apple Oat Muffin recipe.
INGREDIENTS:
2 Cups Old Fashioned or quick cooking oats, uncooked
of course!
1 1/4 cups of Nutriblend or All Purpose flour
1/2 cup packed brown sugar
2 tsp baking powder
3/4 tsp sea salt
1/2 tsp cinnamon
1 cup buttermilk
2 tbsp olive oil
1 large egg lightly beaten
1 cup shredded tart apple such as Granny Smith, Royal Gala or Golden Delicious
1/2 cup chopped walnuts
NOW FOLLOW ME:
Pre-heat oven to 400F.
Lightly grease 12 standard muffin-cups.
In a large bowl mix oats, flour, baking powder, baking soda, sea salt and ground cinnamon.
In medium bowl, beat buttermilk, olive oil, and egg with hand blender, until frothy. Stir in shredded apples.
Add small bowl contents into large bowl with flour and oat mixture, blending until mixture is just moistened; then add chopped walnuts.
Spoon batter into prepared muffin tins.
Bake 23 – 25 minutes or until muffins begin to brown; check the center with a toothpick. If it comes out clean, muffins are done.
Remove muffins from pan onto wire rack to cool for serving later.
Otherwise serve the muffins warm with a pat of butter (remember portions) and a coffee of your favorite choice or herbal tea.
Yield 12 muffins – Yummy!
