MELON MOUTH WATERING SALSA

The tasty melon salsa we are about to make may be used with any chicken dish, meat dish or, a side dish to a your favorite meal. 

INGREDIENTS:

1 large cucumber

1 cantaloupe, diced  1/4″ thick

2 tbsp thinly sliced fresh cut basil

lime juice of one freshly squeezed lime

1 tomato diced and cubed

basil to taste

1/2 jalapeno diced

FOLLOW ME NOW:

To make salsa, halve the cucumbers lengthwise.  Remove seeds with the tip of a spoon and drag it the length of the cucumber piece; slice cucumber 1/4 inch thick.

Toss cucumber, cantaloupe, tomatoes, basil and jalapeno with lime juice in a medium bowl.  Set aside to meld the tasty ingredients together.

Serve with your favorie chicken, or any of your favorite meat or vegetarian dishes.

SASSY CHERRY SALSA

Ultimately, this recipe for cherry salsa is sassy, smart and ready to serve with chicken, beef or any dish you would like to marry this salsa with.  My favorite would be chicken with cherry salsa.

CHERRY SALSA

1/2 lb fresh pitted cherries
1/2 Spanish onion, medium size
1/2 jalapeno pepper minced
2 tbsp fresh minced cilantro
3 tbsp lime juice
Sea salt and freshly ground black pepper
1 green onion (or bunch chives)

TO DO NEXT:

Mix all ingredients once they are minced and set aside to for the delicious salsa to savor the flavors.  You may wish to save the chives to garnish the main dish, chicken in this case. Serve healthy recipe with your favorite chicken or meat dish.  This is an excellent side dish for barbecues as well, as salsa is a diverse sauce.   Bring it on!.

CHICKEN THIGHS & CHERRY SALSA

What a way to doll up chicken thighs and keep the main course an appealing colorful addition to the dinner plate. Healthy Recipes would like you to take note that this dinner is inexpensive and very healthy for everyone.

INGREDIENTS:

12 chicken thighs with skin removed
Sea salt and pepper lightly
Spray olive oil on chicken & bottom of cooking dish

CHERRY SALSA FOR CHICKEN

1/2 lb fresh pitted cherries
1/2 Spanish onion, medium size
1/2 jalapeno pepper minced
2 tbsp fresh minced cilantro
3 tbsp lime juice
Sea salt and freshly ground black pepper
1 green onion (or bunch chives)

This heavenly healthy recipe is so easy – just spray the chicken thighs lightly with olive oil spray.  Barbecue or roast the thighs so they are just cooked (no pink showing).

Mince fresh pitted cherries, Spanish onion and jalapeno pepper and mix well.

Sprinkle lime juice and minced cilantro. Season with sea salt & pepper.

To brighten and for the added taste, garnish the chicken thighs with minced green onions or minced chives.

Serve this captivating, colorful Cherry Salsa beside the barbecued or roasted chicken. This Healthy Recipe is definitely a winner and will keep you on track with your mandate to keep eating for healthy living.

CITRUS GRILLED CHICKEN & MELON SALSA

There is something so terrific about lime juice on chicken.  This recipe has it all for a  healthy  recipegreat taste, great for entertaining.

INGREDIENTS:

1lb chicken breasts

1/2 pepper

jalapeno pepper with seeds removed, thinly sliced

1/3 cup freshly squeezed lime juice

1 garlic clove, finely chopped

2 tsp reduced salt soy sauce

Mixed salad greens

MELON SALSA

1 large cucumber

1 cantaloupe, diced  1/4″ thick

2 tbsp thinly sliced fresh cut basil

lime juice of one freshly squeezed lime

1 tomato diced and cubed

basil to taste

1/2 jalapeno diced

To make salsa, halve the cucumbers lengthwise.  Remove seeds with the tip of a spoon and drag it the length of the cucumber piece; slice cucumber 1/4 inch thick.

Toss cucumber, cantaloupe, tomatoes, basil and jalapeno with lime juice in a medium bowl.  Set aside to meld the tasty ingredients together while we broil or barbecue the chicken.

NOW FOLLOW ME

Sprinkle chicken with pepper and finely chopped jalapeno.  Stir in 2 tbsp lime juice, garlic, soy sauce.  Turn chicken to marinate in sauce at room temperature for 15 minutes.

Preheat broiler or barbecue and coat with non-stick vegetable spray.  Discard marinade from chicken.

Cook chicken until juices run clear, about 5 minutes on each side, turning only once.

Move chicken to cutting board and cut breasts in diagonal strips about 1/4 in thick. 

Toss with mouth dripping  melon salsa. 

Divide healthy living salad greens on 4 plates and spoon chicken and melon mixture on top of each.
