At Healthy Recipes for Healthy Living, we just love to introduce recipes that are new and have a zing, but hold true to healthiness.

This salad is both colourful, zesty, healthy and will be sure to add a zing to your meal, or have it as a meal in itself with whole wheat rye bread or your favorite healthy bread or biscuit.

Healthy Recipes always recommends that you thoroughly cook poultry and it is wise to purchase a meat thermometer if you are uncertain about whether your chicken is cooked. The thermometer should tell you what temperature is correct for which meat.

Another tip is to always bleach any cutting boards, or utensils used when preparing meat. It only takes a second and can save you from some pretty nasty stomach ailments - i.e. salmonella. "lways be prepared", is my motto! Happy Eating!

You may use goat Feta cheese as a substitute for cow Feta. Healthy Recipes recommends Romaine lettuce as it has dark, leafy leaves, which containes lutein, beta-carotene as well as the B vitamin folate. We recommend only the best - iceburg lettuce has virtually no food value in comparison.

Just a quick note: when preparing romaine lettuce leaves, wash in cold water with a drop of bleach or veggie wash, then pat leaves dry with paper towels and put in container in fridge for an hour before making salad. This just gives the lettuce that extra special crunch which adds to any tasty lettuce salad!

Love this melon salsa - for any of my chicken, or other poultry dishes. Melon salsa has all healthy ingredients and can be used for meat dishes as well. Savor the taste and treat your guests with this new special salsa!
